RRRRrrrrrainbow Cake!

Okay people.... I found the solution to all the world's problems, and it's called Rainbow Cake!

I found the idea for this awesomeness HERE, a very cool blog full of delicious things...

And to boost this cake's awesomeness, replace the eggs, oil and water the instructions in the box call for with 12 ounces of CLUB SODA (which is what I did) and end up with a DELICIOUS-LOW-CALORIE-TREAT! Well... as long as you don't eat the whole thing...

Note: I normally don't use cake mixes because why would you when you can make something from scratch... but I don't know how to make a WHITE cake so I went with the box. I was nervous about what it would taste/feel like replacing the eggs and the oil with the soda, but it was fine! The cake tasted good and it felt normal. I recommend it if you're watching your weight!

THREE ingredients, people... Only THREE ingredients!

When you first add the club soda, it does a cool fizzy thing

Separate the dough and mix the colors in (in this case six ways, because I did it in six colors)

Now put each color in a ziplock bag

Cut a corner of the bag and pipe the different colors in a circular pattern

I did two layers, the first one from red to purple and the second layer reversed it from purple to red...

Then i had some leftover that I dropped in random colorful goopiness all over the thing

Tapped it a few times on the counter so it would settle and IN THE OVEN IT WENT!

Half an hour later VOILA! colorful goodness! It was so cool looking I didn't even bother with icing..

Look! the Eye of Jupiter on the bottom of the pan!

The double layer piping results in a cool pattern when the cake is cut

oooOOOOooooooOOOOooooo!

That's it... I'm in love with this thing... I am SO making this again...
